Beef oxtails are considered a delicacy and are ideal for long, slow braising for a rich flavor (they work especially well with slow cookers and pressure cookers!). When cooked for a long time, the tail's bone and cartilage release collagen that turns into gelatin, resulting in some of the most flavorful beef stock you'll have.
