Beef tongue is one of the most delectable, tender cuts of beef due to its high fat to protein ratio and very flavorful due to the amount of exercise the tongue muscle gets. It can be boiled for soup, pickled, roasted, braised in sauce or seared for a crispy outer texture. Tongue is most commonly used for lengua tacos, or eaten for Korean or Japanese BBQ.
