How to Deep Clean Chitterlings at Home
Although IBP chitterlings come pre-cleaned, an extra thorough cleaning ensures the best quality and removes any residual impurities:
- Rinse Thoroughly: Fill a large bowl with cold water and submerge the chitterlings. Swish them around to loosen debris.
- Trim & Inspect: Check for any excess fat or membrane and remove it with a sharp knife.
- Second Rinse: Drain and refill the bowl with fresh cold water. Repeat the rinsing process at least three times until the water runs clear.
- Vinegar Soak (Optional): Soak in a mix of water and ½ cup white vinegar for 15-20 minutes to help remove odors.
- Final Rinse: Drain and give them one last thorough rinse before cooking.
Deep-Fried Chitterlings Recipe
Ingredients:
- 5 lbs cleaned pork chitterlings
- 1 cup buttermilk
- 2 cups cornmeal
- 1 cup all-purpose flour
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tsp paprika
- 1 tsp cayenne pepper (optional)
- Salt & black pepper to taste
- Oil for deep frying
Instructions:
- Pre-Cook the Chitterlings: In a large pot, cover the chitterlings with water and boil for 2-3 hours until tender. Drain and let cool.
- Prepare the Coating: In a bowl, mix cornmeal, flour, garlic powder, onion powder, paprika, cayenne, salt, and black pepper.
- Coat the Chitterlings: Dip the chitterlings in buttermilk, then dredge in the seasoned flour mixture until fully coated.
- Heat the Oil: In a deep fryer or large skillet, heat oil to 350°F.
- Fry Until Golden: Fry the chitterlings in batches for 3-4 minutes until crispy and golden brown.
